Mustard Seed (सरसों) - Mustard seed is a little round seed consisted of various colors which can be found in many parts of the world. In India it is usable in two variants Indian Brown Mustard and Indian Yellow Mustard. Mustard seeds are a very dependable source of protein and oil. Indian Mustard is renowned for their Pungency and also its natural essence, that adds a flavor to our food and specially pickles. Mustard seed has oil percentage between 40% to 46% and approx 24 g protein in 100 grams. Uses: If we say uses for mustard seed it is majorly used to prepare delicious pickles, in Marathi it is known as mohair, in Kannada sasive, in Malayalam and Tamil as kadugu, in Telugu aavalu . The mustard seed is widely used in pickles majorly with mangoes, red chili, Aava Pindi (mustard seed in powdered form) which are totally preserved in mustard oil. The mustard seed is known as Sarso (trilocularis, syn. Brassica campestris var. Sarson, Brassica Rapa subsp, Indian colza). Sarso or Mustard seed is utilized as a spice, seeds of mustard are roasted until they pop. Seeds are used to grow greens known as sage, which is moved over a form of vegetable known as Sarso Ka Saag. Crushing Mustard seeds give us Sarso ka Tel (Mustard oil) which is widely practiced as a Massage Oil.
